Ingredients
4 medium russet potatoes
1 cup shredded cheddar cheese
1/2 cup sour cream or Greek yogurt
1 can of chili beans
2 green onions, sliced
Salt and pepper to taste
Preparation
Preheat your oven to 425°F (220°C).
2. Wash and dry the potatoes thoroughly.
3. Prick each potato several times with a fork to allow steam to escape.
4. Rub the skin with a little oil and sprinkle with salt for extra flavor and crispiness.
5. Place potatoes directly on the oven rack or on a baking sheet.
6. Bake for 45 to 60 minutes until the skin is crisp and a fork slides easily into the center.
After the potato is done
1. Bake the potatoes as described above.
2. Once baked, carefully cut a slit down the center of each potato and gently fluff the inside with a fork.
3. Add chili beans
4. Then top with cheese quickly so it melts
5. Add a spoonful of sour cream or Greek yogurt
6. Top with green onions.
7. Season with salt and pepper.
8. Serve immediately.
