Fresh Chicken Salad

About the Recipe

Ingredients

3 Cups of cooked or canned chicken

1/2 Cup of mayonnaise or Greek yogurt

1/4 Cup of grapes

1 celery sticked chopped

1 Green onion chopped

Salt and pepper to taste

1/4 Cup of pecans chopped

4 Butter croissants

Preparation

Chicken Salad

1. Shred or chop the chicken into bite-sized pieces.

2. Dice the celery and grapes into small chunks.

3. Chop the green onions finely.

4. Chop the pecans

5. In a large bowl, combine the chicken, celery, grapes, green onions, and pecans.

6. Add mayonnaise or Greek yogurt to the bowl, starting with a few tablespoons.

7. Season with salt and pepper.

8. Mix everything gently until well combined. Adjust the seasoning or add more dressing if needed

Croissants

1. Slice croissants in half horizontally.

2. Optionally, toast the croissants lightly to add crunch and warmth. This is personally my favorite way to eat a croissant!

3. Spoon a generous amount of chicken salad onto the bottom half of each croissant.

4. Place the top half of the croissant on the filling and press gently.
