Preparation
Step 1: Preheat the Pan
Use a heavy skillet or cast-iron pan for even heat distribution. Heat the pan over medium-high heat until it’s hot but not smoking. Add a tablespoon of oil with a high smoke point, such as vegetable or canola oil.
Step 2: Sear the Pork Steaks
Place the pork steaks in the pan without crowding them. Let them cook undisturbed for about 4 to 5 minutes. This allows a golden-brown crust to form. Flip the steaks and cook the other side for another 4 to 5 minutes.
Step 3: Lower the Heat and Finish Cooking
After searing both sides, reduce the heat to medium-low. Cover the pan with a lid or foil to trap heat and moisture. Cook for an additional 5 to 7 minutes, flipping once halfway through. This step ensures the pork cooks through without burning the outside. Use a meat thermometer to check doneness. Pork steaks are safe to eat at an internal temperature of 145°F (63°C). Let the meat rest for 5 minutes before serving to allow juices to redistribute.
