About the Recipe

Ingredients
2lbs ground beef or turkey
1 large onion diced
Minced garlic
1 bag frozen sweet corn
1 can green chilis and tomatoes
Chili powder
Cumin
Salt
Pepper
Optional- shredded cheddar cheese
2 boxes of cornbread mix
Milk
Eggs
Oil
Preparation
1. Cook the meat until brown over medium heat. Add onion and garlic, cook until softened.
2. Add corn and tomatoes with green chilis. Stir until combined, then add seasonings (use as much or little as you would like). Let the mixture simmer for 5 minutes or so.
3. Prepare the cornbread per instructions on box. Set aside.
4. Preheat oven on 375F. Spread the meat mixture evenly in a 9x13 baking dish. *Optional-go ahead and spread shredded cheese over top of mixture*
5. Pour the cornbread batter evenly over the top of mixture.
6. Bake for 20-25 minutes or until cornbread is golden brown and cooked through.
Let the casserole cool slightly before enjoying!
