Iced Oatmeal Bars

Ingredients

Bars

  1. 1/2 cup unsalted butter

  2. 1 cup quick oats or old fashioned

  3. 1 cup + 2Tbl flour

  4. 1tsp baking soda

  5. 1tsp cinnamon

  6. 1/2 tsp salt

  7. 1/2 cup sugar

  8. 1/2 cup brown sugar

  9. 1 egg

  10. 1tsp vanilla

  11. 1Tbl molasses

Icing

  1. 1/2 cup powdered sugar

  2. 1-2Tbl milk

  3. 1/4tsp vanilla

Preparation

Bars

1. Preheat your oven to 350°F (175°C). Grease or line an 8x8 baking pan with parchment paper.


2. Add wet ingredients: Melt 1/2 cup of butter, let it set and cool for about 10 minutes. Once Cooled, mix it with the sugars until combined well. Then add one beaten egg and 1 teaspoon of vanilla extract and molasses. Mix until well combined.


3. Mix dry ingredients: In a large bowl, combine oats, brown sugar, sugar, flour, baking soda, salt, and cinnamon.

Press the mixture evenly into the prepared pan.


4. Bake for 20-25 minutes or until the edges turn golden brown. Remove from the oven and let cool completely before icing (about 2 hours).


Icing

  1. In a small bowl, whisk together powdered sugar with milk and vanilla.

  2. Adjust the milk quantity to get a smooth but thick icing that spreads easily.

  3. Spread the icing evenly over the cooled oatmeal bars.
