Ingredients

1/2 cup unsalted butter
1 cup quick oats or old fashioned
1 cup + 2Tbl flour
1tsp baking soda
1tsp cinnamon
1/2 tsp salt
1/2 cup sugar
1/2 cup brown sugar
1 egg
1tsp vanilla
1Tbl molasses
Icing
1/2 cup powdered sugar
1-2Tbl milk
1/4tsp vanilla
Preparation

1. Preheat your oven to 350°F (175°C). Grease or line an 8x8 baking pan with parchment paper.
2. Add wet ingredients: Melt 1/2 cup of butter, let it set and cool for about 10 minutes. Once Cooled, mix it with the sugars until combined well. Then add one beaten egg and 1 teaspoon of vanilla extract and molasses. Mix until well combined.
3. Mix dry ingredients: In a large bowl, combine oats, brown sugar, sugar, flour, baking soda, salt, and cinnamon.
Press the mixture evenly into the prepared pan.
4. Bake for 20-25 minutes or until the edges turn golden brown. Remove from the oven and let cool completely before icing (about 2 hours).
Icing
In a small bowl, whisk together powdered sugar with milk and vanilla.
Adjust the milk quantity to get a smooth but thick icing that spreads easily.
Spread the icing evenly over the cooled oatmeal bars.
