It combines simple ingredients, straightforward preparation, and rich flavors that make it a great choice for weeknight dinners or casual gatherings. This recipe balances cost and taste without sacrificing quality or comfort.


Ingredients You Will Need


Before starting, gather these affordable and easy-to-find ingredients:


For the Chicken Bake

  • 4 chicken breasts or thighs (thighs are usually cheaper)

  • 1 tablespoon olive oil

  • 1-2 tablespoon garlic powder (or to taste)

  • 1-2 tablespoon onion powder (or to taste)

  • 3 Teaspoons of ground clove

  • 1 jar of pasta sauce

  • 1-2 cups of cheese (your choice)

  • 1/2 cup of breadcrumbs


For the Creamy Risotto

  • 1pkg of garlic risotto

  • 2 2/3 cups of water


How to Prepare the Chicken Bake


  1. Preheat the oven to 425°F.

  2. Oil the baking dish with olive oil (or vegetable oil)

  3. Place the chicken in a baking dish in a single layer.

  4. Add sauce on top of the chicken.

  5. Season the chicken with garlic powder, onion powder, and clove. Sprinkle the spices evenly over each piece.

  6. Add breadcrumbs evenly over chicken, then sprinkle with shredded cheese.

  7. Bake covered with foil for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is golden and bubbly.

  8. Let cool for 5 minutes before serving.


This method keeps the chicken juicy and flavorful while the clove and tomato sauce add a comforting, savory touch.


How to Make Creamy Risotto


Risotto from scratch can be difficult and time consuming, fortunately Aldi has a cheap pre-packaged risotto that is tasty and comes in different flavors. For this recipe, I used a garlic flavored risotto.

  1. Prepare the water by placing it in a pot and bring to a boil.

  2. Once boiling, add risotto and turn down to medium heat.

  3. Stir every couple of minutes while waiting for risotto to fully absorb all water.

  4. Once water is absorbed, serve and enjoy!


Although not a homemade risotto, this cheaper option is tasty and pairs well with multiple dishes. I keep around 2-3 packs in the pantry at all times and bring it out to add a comforting addition to any meal.


Tips to Keep This Meal Budget Friendly


  • Choose chicken thighs over breasts for better flavor and lower cost. I used chicken breast this time around, as this is what was readily available from my freezer.

  • The seasoning can be anything that tastes good to your palate and what is already in your house. I do suggest adding the clove, as this will make it taste so comforting and homey.

  • Pre-packaged risotto is a quick, tasty and budget friendly side to have on hand. It is for sure a family favorite for us!
