Cake Pops!

Over the past few years, cake pops have gained popularity as a fun and tasty treat. These small desserts blend the rich taste of cake with a chocolate coating, making them easy to take on the go or share. Cake pops are not typically seen as a budget-friendly dessert; however, places such as Dollar Tree have started to carry cake pop ingredients. This has made cake pops an easy go-to dessert in my house!
What You Need to Make Cake Pops
Before starting, gather the ingredients and tools.
Cake: You can use any flavor, from chocolate to vanilla or red velvet.
Candy melts or chocolate coating: For dipping and decorating the cake pops.
Cake Sticks: These hold the cake pops and make them easy to eat.
Decorations: Sprinkles, crushed nuts, or edible glitter add a finishing touch.
How to Prepare the Cake Base
To save time, I usually opt for a box cake mix. There are times when I make cakes from scratch, but for this recipe, we'll be using a box mix.
Follow the instructions on the back of the box to prepare the cake. I often add an extra egg yolk and an additional tablespoon of oil. This makes the cake more moist and easier to shape into balls. Mix until well combined, then pour into your pre-greased cake pan(s). Bake for 30-40 minutes, being careful not to overbake, as this can create problems when trying to achieve a dough-like texture. As soon as you remove the cake from the oven, transfer it to a mixing bowl and mix until a dough forms (2-3 minutes).
Shaping and Chilling the Cake Pops
When the mixture is ready, shape it into small balls approximately 1 to 1.5 inches in diameter. I use a tablespoon to scoop the mixture. Arrange the balls on a baking sheet lined with parchment paper and insert a cake stick halfway into each one.
Refrigerate the cake pops for at least 1 hour. This allows them to firm up, making the dipping process easier. If they are too soft, they might fall apart during dipping.
Dipping and Decorating Cake Pops
Melt the candy melts or chocolate coating according to package instructions. Be careful to not overheat the chocolate or candy melts.
Dip each cake pop into the melted coating, tapping off excess gently. Hold the pop upright and let the coating set for a few seconds. Before the coating hardens completely, add decorations like sprinkles or crushed nuts.
You can lay the cake pops down. However, it will cause one side to be a little flat. If you have a way to prop the sticks up (Styrofoam or cake pop stand) they will have the rounded look. If I am making them for family or for a quick grab-and-go sweet, I will lay them down. It is easier and takes less supplies.

Use fresh cake for the best flavor and texture.
Avoid overbaking the cake mixture to keep the cake pop mixture moist.
Work quickly when dipping to prevent the coating from hardening too soon.
If the coating thickens, reheat it gently to keep it smooth.
Experiment with different flavors and decorations to create unique cake pops.
Storing Cake Pops
Cake pops can be stored in an airtight container at room temperature for up to two days. For longer storage, keep them in the refrigerator for up to a week. Bring them to room temperature before serving for the best taste.
Cake pops also freeze well. Wrap them individually in plastic wrap and place them in a freezer-safe container. Thaw in the refrigerator overnight before enjoying.

Cake pops offer endless possibilities for fun designs and can showcase someone's individual style!
Themed designs: Use colored candy melts and decorations to match holidays or parties.
Fillings: Add a surprise center like a small piece of candy or fruit.
Shapes: Try shaping the mixture into hearts, stars, or animals for special occasions.

It is very important to make sure that all the cake pops are firm. If they are not firm enough, the cake pops will come apart when dipping into warm candy melt or chocolate.

Adding Sprinkles or Drizzle
After dipping the cake pop and letting excess drip off, shake sprinkles before coating dries. This will make sure the sprinkles stay on the cake pops.
If drizzling with other flavors of melts or colors, make sure to let first coat dry, then drizzle.

Cake Preperation
1. Pour classic white cake mix into mixing bowl.
2. Add egg whites and egg yolk
3. Add in milk, water, and oil
4. Mix on medium speed for 2 minutes, scraping down sides as needed.
5. Pour batter into greased cake pan (follow baking directions for pan size on back of box)
6. Place cake in oven and bake for 30-40 minutes, or until toothpick comes out with a little crumb stuck to it.

Making Cake Pop Balls
Once the cake is done baking, instantly dump it into the mixing bowl and mix on medium speed until a dough forms. The cake will be hot, and will make your mixing bowl hot, so be careful.
Once the dough has formed, use a tablespoon and scoop out the dough. Roll and form the dough into balls and place on a baking sheet (use parchment or wax paper to cover baking sheet). Once all the cake balls are formed, use the cake sticks and place them halfway through the cake ball. Place in the freezer for 1-2 hours, or until cake pops are firm. *

Candy Melt Preparation
There are several ways to melt down the candy melts. To save time, I put the candy melts into a microwave safe bowl and heat it in 30 second increments. At the end of the 30 seconds, stir candy melts. Once candy melts start to become liquid, keep a careful eye on it. It is easy to overheat the candy melts and burn them. If this happens, you will need to throw out that batch and start again.

Putting It All Together
Once candy melts are melted down, and cake pops are firm, you can start to cover the cake pops. Take a cake pop and place it into the candy melt. Make sure all of the cake pop is covered. Hold the cake pop and let the excess drip off, then hold onto the cake pop for a few second to let the coating harden. Place into stand or lay back on baking sheet. Repeat until all cake pops are done. **
